Heat a medium sized skillet over medium heat with olive oil.
Add the onions and allow them to caramelize, stirring them occasionally. It should take about 30 minutes for them to deepen in color and become sticky and soft.
Preheat oven to 425 degrees.
Roll out the pizza dough.
Brush the oil from the sardines over the pizza dough.
Spread the caramelized onions onto the dough.
Top the onions with the kalamata olives and thyme
Bake for 15-20 minutes until golden brown.
Remove from the oven. Garnish with a little flaky se salt.
